Quick Asian crunchy noodle chopped salad
15 Min Prep / 5 Min Cook / 6 Serving
Ingredients :
300g snow peas
1⁄2 red cabbage, finely shredded
4 green shallots, thinly sliced diagonally
65g (1 cup) fresh bean sprouts
1 bunch baby pak choy, leaves separated, halved lengthways if large
2 carrots, peeled, shredded with a julienne peeler or cut into matchsticks
100g packet Chang’s Crunchy Fried Noodles
125ml (1⁄2 cup) Chang’s Crispy Noodle Salad Dressing
Method Steps :
Blanch snow peas in a saucepan of boiling water for 1 minute or until tender crisp. Refresh under cold running water then drain.
Arrange cabbage down the centre of a 35cm oval platter. Arrange the shallot, bean sprouts, pak choy, carrot, snow peas and noodles in rows on either side of cabbage.
Toss salad (see tips). Divide among serving plates. Drizzle over dressing to serve
