Mini ham, cheese and rice melters

Ingredients : 


75g butter, melted

40g sliced ham, finely chopped

1 garlic clove, crushed

125g tub brown rice, grains separated

1 zucchini, coarsely grated

2 x 125g corn kernels, drained

40g (1/2 cup) grated pizza cheese

3 eggs, lightly whisked


Method Steps : 


Preheat oven to 200C/180C fan forced. Brush 22-holes of a 24-hole mini muffin pan with melted butter. Place the pan in the refrigerator until required.


Place ham, garlic, rice, zucchini, corn, cheese and egg in a large bowl. Stir to combine. Spoon mixture evenly among prepared holes. Bake for 20 minutes or until the egg is set.


Stand for 2 minutes before removing the melters from the pan. Set aside to cool. Serve.
