Air fryer Scotch eggs

Ingredients :
600g pork sausages
1 tbsp Italian herb mix
6 hard-boiled eggs
2 eggs, lightly whisked
75g (3/4 cup) dried breadcrumbs
Tomato chutney, to serve
Method Steps :
Remove casings from sausages and discard. Place sausage mince and herb mix in a medium bowl and mix well to combine. Divide mixture evenly into 6 portions.
Working with one portion at a time, flatten mince mixture into a thin round. Place a hard-boiled egg in the centre of mince mixture and shape mince around egg to fully enclose. Repeat with remaining mince mixture and hard-boiled eggs.
Place beaten egg in a shallow bowl. Place breadcrumbs in a shallow dish. Coat balls in beaten egg and then in breadcrumbs to coat.
Spray air fryer basket with oil. Place eggs in basket and spray generously with oil. Cook on 200C for 20 minutes, turning and spraying eggs with oil halfway through cooking time. Serve with tomato chutney.
