Leftover frittata salad

Ingredients : 


50g sugar snap peas, trimmed, halved lengthways

75g cherry tomatoes, halved

30g mixed salad leaves

1 serve frittata (see recipe notes), cut into 3cm pieces

2 tsp white balsamic condiment

1 ⁄2 tsp Dijon mustard


Method Steps : 


Cook the sugar snap peas in a steamer basket over a saucepan of boiling water for 2 minutes or until bright green and tender crisp. Refresh under cold running water. Drain well


Combine the sugar snap peas, tomato, salad leaves and frittata in a serving bowl. Whisk together the balsamic and mustard in a small jug. Drizzle over the salad just before serving.
