Cheddar slice

Ingredients : 


20 Arnott’s Country Cheese crackers

500g cream cheese, chopped, at room temperature

2 eggs

60ml (1/4 cup) thickened cream

120g (1 1/2 cups) grated vintage cheddar cheese


Method Steps : 


Preheat oven to 180C/160C fan forced. Lightly grease a 16 x 26cm pan and line with baking paper, extending over the two long sides. Arrange half the crackers over the base of the pan, in 2 rows of 5 (they won’t cover the base completely).


Use electric beaters to beat the cream cheese until creamy. Add the eggs and cream, and beat until combined. Fold in the grated cheddar. Spread evenly over biscuit base and smooth the surface.


Arrange remaining biscuits on top of the cheese mixture, in 2 rows of 5 (don’t worry about them lining up perfectly with the crackers on the base). Bake for 25 minutes or until filling has set (the filling may puff up slightly, but will level out on cooling).


Stand at room temperature to cool completely. Cut between the crackers on top to make 10 pieces.
