Potato gem tuna mornay

Ingredients :
350g frozen potato gems
60g butter, chopped
1 brown onion, finely chopped
40g (1/4 cup) plain flour
500ml (2 cups) milk
80g (1 cup) grated tasty cheese
425g can tuna in springwater, drained, flaked
1 tbsp chopped chives or continental parsley (optional)
Method Steps :
Preheat oven to 230C/210C fan-forced. Lightly grease a 6-cup-capacity ovenproof dish. Arrange potato gems on a large baking tray. Bake, turning gems halfway through, for 20 minutes or until crisp and golden.
Meanwhile, melt butter in a saucepan over medium heat. Add onion and cook, stirring occasionally, for 3-4 minutes or until softened but not browned. Sprinkle flour over and cook, stirring, for 1 minute.
Add milk, at little at a time, stirring until well combined between each addition. Cook, stirring, for 4 to 5 minutes or until mixture boils and thickens. Remove from the heat. Add half the cheese and stir until melted. Fold in tuna. Season.
Spread mixture into the prepared dish. Switch oven setting to grill. Arrange potatoes gems on top of tuna mixture and sprinkle with remaining cheese. Grill for 5 minutes or until cheese is melted and bubbling. Sprinkle with herbs, if using, and serve immediately.
