Smoked chicken and potato salad board

Ingredients : 


1kg baby coliban (chat) potatoes

150g baby rocket

1 bunch fresh chives, chopped

250g (1 cup) sour cream

70g (1 ⁄4 cup) horseradish cream

1 lemon, rind finely grated, 1 ⁄2 juiced


Method Steps : 


Place the potatoes in a saucepan and cover with plenty of cold water. Bring to the boil and cook for 20-25 minutes or until tender. Drain. Set aside to cool completely then thickly slice.


Place the rocket, chives, sour cream, horseradish cream, lemon rind and juice in a blender. Blend until smooth. Season.


Place the potato and half of the dressing in a large bowl. Season then toss until coated. Serve with the remaining dressing in a small serving bowl.
