Cheat's pineapple doughnuts

Ingredients : 


440g can pineapple slices in juice, drained

75g (½ cup) gluten-free self-raising flour

100ml chilled sparkling water

Vegetable oil, for deep frying

55g (¼ cup) caster sugar

¼ tsp ground cinnamon

Honey, to serve (optional)


Method Steps : 


Pat pineapple slices dry with paper towel. Place the flour in a bowl and whisk in the sparkling water until smooth.


Half-fill a saucepan with oil. Heat to 180°C. Combine the sugar and cinnamon in a wide, shallow bowl.


Dip half the pineapple in flour mixture to coat then gently drop into oil. Cook, turning once, for 1½ minutes or until crisp and golden


Drain on paper towel. Repeat with remaining pineapple and flour mixture. Cool slightly then toss in cinnamon sugar. Serve warm with ice-cream and honey, if using.
